Spinach casserole with rice and cheese

Ingredients for 4 servings:

  • 1 large onion(s)
  • 2 bags of rice
  • 750 ml vegetable stock
  • 1 package of spinach, approx. 500 g
  • n. B. cheese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Dice the onion. Cut the cheese into larger cubes. Fry the onions in a little oil in a roasting pan or pan. When the onions are translucent, add the uncooked rice and fry briefly. Deglaze with the vegetable stock. Spread the spinach and cheese with the rice mixture in a covered roasting pan or in a casserole dish and bake in the oven at 180°C for 40-45 minutes. If the casserole starts to get too brown, cover with aluminum foil and continue cooking.
