Spinach couscous

Ingredients for 2 servings:

  • ½ cup couscous
  • 250 g leaf spinach
  • 1 onion(s)
  • 120 g feta cheese
  • 10 dates
  • 1 shot of pomegranate syrup
  • salt and pepper
  • 1 handful of parsley
  • olive oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

with dates and feta

Let the couscous swell according to the package instructions. Wash the spinach leaves and dice the onions. Heat olive oil, sauté the onions, add the spinach, and sauté until it collapses. Finely chop the dates and parsley. Add the couscous and dates and fry briefly. Crumble the feta and add it. Continue frying briefly. Season to taste with a dash of pomegranate syrup, salt, pepper, and parsley.
