Ingredients for 1 servings:

  • 100 g flour
  • 1 pinch of salt
  • 1 tsp baking powder
  • 80 g butter, soft
  • 75 g quark
  • 100 g spinach, fresh
  • 1 small onion(s)
  • 65 g ricotta

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Mix together the flour, baking powder, salt, butter, and curd cheese, then knead into a dough. Let the dough rest. Meanwhile, clean, wash, and finely chop the spinach. Peel and finely chop the onion and sauté it in a pan with a little oil. Stir in the spinach, then transfer it to a bowl and stir in the ricotta. Roll out the dough into a rectangle (3 mm thick) and cut into small triangles. Spread the filling among the triangles and roll them up into croissants. Place the spinach croissants on a baking sheet lined with baking paper and bake in a preheated oven at 190°C for about 15-25 minutes.
