Spinach eggs

Ingredients for 4 servings:

  • 300 g leaf spinach, frozen
  • 4 eggs
  • 100 g cheese, grated, e.g. Gouda
  • 1 onion(s)
  • 1 tbsp oil
  • salt and pepper
  • Nutmeg, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Thaw the spinach and squeeze out any excess water, then chop coarsely if necessary. Peel and finely dice the onion. Preheat the oven to 180 degrees Celsius (top/bottom heat). Sauté the diced onion in oil, add the spinach and cheese. Heat the mixture briefly, then remove from the heat and season with salt, pepper, and nutmeg. Separate the eggs and fold the egg whites into the spinach mixture. Divide the spinach mixture between four small, ovenproof dishes and place an egg yolk on top of each. Let the spinach eggs set in the oven for about 20 minutes. Serve with toasted farmhouse bread!
