Spinach frittata

Ingredients for 4 servings:

  • 700 g potatoes
  • 1 small onion(s)
  • 2 cloves garlic
  • some oil for frying
  • 450 g leaf spinach
  • 10 eggs
  • 200 g sour cream
  • 200 g cheese, grated
  • e.g. salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

vegetarian, easy, quick

Peel the uncooked potatoes and cut into small cubes. Fry in a pan for about 8 minutes. Remove from the pan. Chop the onion and garlic, fry in a little oil, and add the spinach (thawed or fresh). Season with salt and pepper. Whisk the eggs with the sour cream and add half of the cheese. Season with salt and pepper. Place the potatoes and spinach in a baking dish. Spread the egg mixture evenly over the potatoes. Sprinkle the remaining cheese on top. Place the baking dish in a preheated oven at 200°C for 20 minutes, until the egg mixture has set. A mixed salad goes well with this dish.
