Sweet potato grilled vegetables

Ingredients for 4 servings:

  • 1 large sweet potato(s)
  • 1 m.-sized onion(s)
  • 1 bowl of cherry tomatoes
  • 1 roll(s), stale
  • some chives
  • some olive oil
  • 1 tbsp, heaped herbs, Italian
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Cut the sweet potato and the stale roll into small cubes. Peel and halve the onion, then slice it into thin strips. Quarter the cherry tomatoes and remove the stems. Combine everything in a bowl and add the chives. Drizzle with olive oil, sprinkle with the Italian herbs, and mix well. Season with salt and pepper to taste. Pour the mixture into a grill tray and let it sizzle on the hot grill for about 45 minutes, stirring occasionally. I use a kettle grill. But I think if you cover the grill tray, it will work on any grill.
