Spinach Lasagna

Ingredients for 4 servings:

  • 1 package creamed spinach, frozen
  • 1 package of leaf spinach, frozen
  • Lasagne sheet(s) (without pre-cooking), quantity as required
  • 400 ml milk
  • 1 package of blue cheese
  • 1 package of cream cheese
  • salt and pepper
  • nutmeg
  • 1 clove(s) garlic
  • 100 g cheese, grated
  • e.g. Parmesan, freshly grated
  • possibly mozzarella
  • possibly sauce thickener

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

very easy – very quick – very tasty

Heat the milk with the finely chopped blue cheese and cream cheese until the cheese has melted. Thicken with a little sauce thickener, if desired. Season with nutmeg and set aside. Thaw the creamed spinach and leaf spinach together, then heat and season with garlic, salt, and pepper. Layer the lasagna sheets alternately with the spinach and sauce in a baking dish, beginning and ending with the spinach and sauce. Finally, sprinkle with grated cheese and, if desired, top with finely chopped mozzarella. Bake at 175 degrees Celsius for about 30 minutes. Cheese lovers can also sprinkle the finished lasagna with Parmesan cheese. It goes well with a fresh, mixed salad with vinaigrette. To make things a bit healthier given this calorie content, I use whole-wheat pasta.
