Spinach, mushroom and ham casserole

Ingredients for 4 servings:

  • 1.2 kg spinach, finely chopped, frozen
  • 350 g mushrooms
  • 300 g cooked ham, sliced
  • 300 g pasta, e.g. B. Fusilli or Spirelli
  • 4 eggs
  • 100 g whipped cream
  • 1 onion(s)
  • 4 cloves garlic
  • 4 tbsp sunflower oil
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Defrost the spinach. Cook the pasta al dente. Roughly chop the mushrooms and ham. Whisk the eggs with the cream, salt, pepper, and nutmeg. Finely dice the onion and garlic and fry in the oil for 2 minutes. Add the spinach, season with salt and pepper, and simmer for 10 minutes. Stir in the mushrooms, ham, and pasta. Transfer everything to a baking dish and pour the egg and cream mixture evenly over the mixture. Bake in the oven at 175 degrees Celsius (convection oven) for 30 minutes. Serve with a fresh salad of your choice.
