Lasagna with Chinese cabbage and chorizo

Ingredients for 6 servings:

  • 1 garlic clove(s)
  • 2 spring onions
  • 200 g mushrooms, brown
  • 1 Chinese cabbage
  • 1 spicy chorizo ​​(approx. 250 g)
  • 500 ml vegetable stock
  • 200 g crème fraîche
  • 100 g herb cream cheese
  • 200 g herb cheese spread
  • 12 lasagna sheets
  • 200 g grated cheese (e.g. Gouda)
  • e.g. salt and pepper
  • e.g. paprika powder
  • e.g. cayenne pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Peel and finely chop the garlic, slice the spring onions into rings. Clean the mushrooms, rinse the Chinese cabbage, and cut both into strips. Heat a high-sided frying pan. Dice the chorizo ​​and fry in the pan over high heat for about 1 minute. Add the mushrooms, Chinese cabbage, garlic, and spring onions and fry for 3-4 minutes. Deglaze with vegetable stock, then stir in the crème fraîche, cream cheese, and processed cheese. Season with salt, pepper, paprika, and cayenne pepper. Preheat oven to 200°C (top/bottom heat). In a large baking dish, alternate layers of sauce and lasagna sheets, then top with the sauce. Sprinkle with grated cheese and bake in a hot oven for 45 minutes.
