Spinach omelet with crab

Ingredients for 4 servings:

  • 300 g spinach, frozen
  • 12 eggs
  • 60 g butter
  • 1 bunch of chives
  • 250 g North Sea crabs
  • 4 tbsp crème fraîche
  • Salt
  • Cayenne pepper

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the spinach according to the package instructions, squeeze out excess water, finely chop, and mix with the eggs and 40g of liquid fat. Season with salt and pepper. Finely chop the chives and toss with the prawns. Heat 1/4 of the omelet mixture in 5g of butter in a pan over medium heat, then sprinkle with 1/4 of the prawns and fold over. Serve with 1 tablespoon of crème fraîche.
