Spinach pizza roll

Ingredients for 3 servings:

  • 450 g spinach, frozen, chopped
  • 6 large eggs
  • 50 g mozzarella, grated
  • 100 g mozzarella, grated
  • 120 g Leberkäse (pizza liver cheese), finely sliced
  • some salt and pepper
  • 2 tsp pizza seasoning

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

low carb, ideal in the evening, easy

Thaw the spinach, or at least let it thaw thoroughly, chop it finely with a knife, and mix it well with the eggs, 50g mozzarella, pizza seasoning, salt, and pepper in a bowl by hand. Spread the mixture on a baking tray lined with baking paper (just enough for one tray) and bake in a preheated oven at 160-170°C (convection oven) until it’s set. This takes about 15-20 minutes. Remove the tray and spread the Leberkäse evenly over the mixture, leaving the edges free. Spread the 100g mozzarella on top and roll the mixture into a roll using the baking paper. Return to the oven for another 2-3 minutes. Then cut the roll into pieces and serve immediately. Boiled potatoes would also go well with this if you’re not cooking low-carb.
