Spinach, potato and feta casserole

Ingredients for 4 servings:

  • 400 g spinach, fresh
  • 700 g potatoes, cooked in their jackets
  • 1 pack of feta cheese, approx. 200 g
  • 1 ball of mozzarella
  • 2 onions, red
  • 100 g dried meat
  • 2 cloves garlic
  • 1 shot of Metaxa
  • 3 tbsp crème fraîche
  • 20 g butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cut the dried meat, onions, and garlic into pieces and sauté in a pan. Deglaze with Metaxa. Wash the spinach thoroughly, roughly chop it, and add it to the pan. Sauté over medium heat for about 10 minutes. Add the crème fraîche and a knob of butter. Add the cooked and peeled potatoes. Preheat the oven to 200°C (fan). Fill a baking dish with the ingredients and mix with the mozzarella and feta cheese. Top with the cheese. Bake in the oven for about 20-30 minutes.
