Spinach quiche à la Karin

Ingredients for 4 servings:

  • 1 pack of puff pastry, frozen
  • 1 pack of creamed spinach, frozen
  • 60 g Parmesan
  • 4 eggs
  • 5 tbsp cream
  • 1 cottage cheese or cream cheese
  • Salt
  • ½ tsp pepper
  • ½ tsp nutmeg
  • 1 egg yolk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Press the thawed puff pastry into a quiche dish, reserving some dough. Squeeze the thawed creamed spinach until it is as dry as possible. Using a food processor or hand mixer, make a filling from the spinach and the remaining ingredients and pour it onto the base. Roll out the remaining pastry, cut thin strips, and arrange them in a diamond pattern on top of the spinach filling. Press the ends of the strips firmly against the edges of the quiche. Brush the diamond pattern and the edges with egg yolk. Bake in the oven at 180-200 degrees Celsius for about 45 minutes. Serve with a tomato salad, for example. The quiche tastes great both fresh from the oven and cold as part of a buffet.
