Spinach Raclette

Ingredients for 4 servings:

  • 800 g spinach, fresh, young (also frozen)
  • 1 onion(s)
  • 1 clove(s) garlic
  • 50 g butter
  • 1 tsp lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the butter and fry the onion until translucent. Remove the pan from the heat and add the crushed garlic clove; then return the pan to the stove and add the clean, rinsed spinach. Cook for 6-8 minutes, stirring frequently (young spinach doesn’t need any extra cooking time!). Add no liquid other than the lemon juice. Season with salt and keep warm on the raclette grill. Serve in portions on the warmed plates and drizzle with melted cheese. Serve with potatoes, of course. Tip: If you like, you can sprinkle some freshly grated nutmeg over the spinach.
