Spinach rice a la Melli

Ingredients for 6 servings:

  • 1 kg leaf spinach (frozen)
  • 2 cups rice (preferably Basmati)
  • 4 cups water
  • 1 tsp salt
  • 1 pack of feta cheese
  • 2 pinches of nutmeg
  • some olives, black and green, mild
  • Spice(s), of your choice
  • 1 onion(s), finely diced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Recipe from Greece

Sauté the spinach and onion in olive oil and add a little water to thaw the spinach. Cook the rice with salt. Cut the feta cheese into small cubes. Mix the rice with the spinach and feta cheese. Garnish with the olives.
