Spinach roll with mushroom filling

Ingredients for 8 servings:

  • 450 g creamed spinach
  • 2 eggs
  • 200 g cheese, grated, spicy
  • 200 g herb cream cheese
  • 250 g mushrooms, e.g. champignons

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Thaw the creamed spinach. Stir in the eggs. Line a baking sheet with baking paper and spread the spinach mixture on it. Sprinkle the grated cheese on top. Bake in a preheated oven at 200 degrees Celsius (convection oven) for 25 minutes. Allow the mixture to cool. In the meantime, finely chop the mushrooms and fry them vigorously in a hot pan until browned. Allow the mushrooms to cool, then mix them with the herb cream cheese in a bowl and spread it on the cooled spinach mixture. Pull the baking paper up along the long side to form the mixture into a roll. Refrigerate for 2-3 hours (or overnight). Slice before serving. You can also make the herb cream cheese yourself using cream cheese and fresh herbs.
