Spinach salad with berries and goat cheese

Ingredients for 4 servings:

  • 150 g spinach (baby spinach), organic
  • 200 g strawberries
  • 50 g blueberries
  • 100 g goat cheese
  • 30 g macadamia nuts, possibly halved
  • 2 tbsp strawberry vinegar
  • salt and pepper
  • ½ tsp mustard, medium hot
  • ½ tsp agave syrup
  • 4 tbsp oil, e.g. walnut oil
  • 1 shallot(s), very finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sort the spinach, wash it, and drain well. Wash, hull, and slice the strawberries. Wash the blueberries. For the dressing, mix the vinegar, mustard, salt, pepper, agave syrup, and oil well and add the diced shallots. Carefully fold the dressing into the spinach and berries. Crumble the goat’s cheese over the salad and sprinkle with the nuts.
