Spinach salad with feta and crispy bacon

Ingredients for 2 servings:

  • 100 g spinach, fresh, young
  • 80 g feta cheese
  • 80 g streaky smoked bacon
  • 50 ml rapeseed oil
  • 25 ml white wine vinegar, milder
  • 1 tsp, leveled mustard, medium hot
  • 1 clove(s) garlic clove(s)
  • Salt
  • Pepper, freshly ground white

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Clean, wash, and dry the lettuce. Crumble the cheese slightly. Cut the bacon into not-too-thick cubes or strips and add it to the still-cold pan. Turn on the heat and slowly fry the bacon until crispy. Degrease the bacon on kitchen paper. Meanwhile, finely chop the garlic. Combine the vinegar, oil, garlic, mustard, and spices in a screw-top jar and shake vigorously. Toss the spinach with the salad dressing and arrange on plates, sprinkle with cheese, and add the bacon to the salad. Serve immediately.
