Spinach Salad with Grilled Aubergine, Feta and Smoked Almonds
The perfect spinach salad with grilled aubergine, feta and smoked almonds recipe with a picture and simple step-by-step instructions.
- 1 Onion
- 2 packet Baby spinach
- 1 Eggplant fresh
- 200 g Smoked almonds
- 200 g Feta
- Balsamic vinegar
- Herbs
- Oil
- Salt
- Pepper
- Wash the baby spinach and place in a bowl. Crumble the feta by hand, add and mix both.
- Cut the aubergine into small cubes and roast in a pan with a little olive oil, then let cool down briefly.
- Meanwhile, chop a small onion for the vinaigrette and mix with the balsamic vinegar, oil, salad herbs and salt and pepper.
- Put the spinach and feta mixture on a plate, sprinkle a handful of grilled aubergine cubes over it, pour the vinaigrette over it and finally sprinkle some smoked almonds around it.
