Spinach salad with peach

Ingredients for 2 servings:

  • 100 g spinach, young
  • 1 onion(s), red
  • 2 peaches
  • 1 ball of mozzarella
  • 75 g lean ham cubes
  • 1 tbsp butter
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar, lighter
  • 1 tbsp honey
  • 4 sprigs of oregano
  • 4 sprigs of thyme
  • 1 tsp chervil, dried
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash the peaches, remove the stones, and cut into wedges. Sort the spinach, wash, and spin dry. Peel and roughly chop the onion. Wash the oregano and thyme, spin dry, and finely chop the leaves. Drain the mozzarella and cut into large pieces. Mix a vinaigrette with 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon honey, 2/3 of the oregano and 2/3 of the thyme, chervil, pepper, and salt. Sauté the ham cubes in a pan with 1 teaspoon of olive oil. Add the onions to the ham and fry them together. Briefly sauté the peach wedges on both sides in 1 teaspoon of butter. Arrange the spinach on plates, top with the still-warm peach slices, the warm ham, and the onions. Spread the mozzarella over the salad and drizzle with the vinaigrette. Sprinkle with the remaining oregano and thyme and serve immediately.
