Spinach salad with sesame dressing

Ingredients for 2 servings:

  • 250 g spinach, fresh
  • 1 tbsp sesame seeds, roasted
  • 1 tbsp sesame paste (tahini)
  • 2 tbsp soy sauce, Japanese
  • 2 tsp sugar
  • 1 tsp vinegar (e.g. Altmeister), or better rice vinegar
  • e.g. sesame

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 12 minutes

Blanch the spinach in salted water and rinse with cold water. Then place it in a sieve and squeeze out any excess liquid after draining. Combine all the remaining ingredients in a small bowl. Toss the spinach with the dressing. Serve as a side dish to sushi in small bowls and sprinkle with a few extra sesame seeds. The highlight is definitely the tahini, and it’s irreplaceable!
