Spinach sauce

Ingredients for 4 servings:

  • 800 g spinach, frozen
  • 1 onion(s)
  • 1 cup sour cream
  • 2 tbsp butter or margarine
  • 2 tbsp, heaped flour
  • 300 ml vegetable stock
  • salt and pepper
  • cumin
  • e.g. instant vegetable broth

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

vegetarian, easy, quick

Defrost the spinach, peel the onion, and chop it into small cubes. Sauté the onion in butter or margarine until translucent, then dust with flour. Sauté briefly, then whisk in the vegetable stock until a fairly thick liquid forms. Next, add the spinach and sour cream. Simmer briefly, and if the sauce is too thick, thin it with vegetable stock, if desired. Finally, season to taste with salt, pepper, cumin, and, if desired, vegetable stock. Tastes especially good with potatoes and fried or boiled eggs. Instead of sour cream, you can also use sour cream or heavy cream.
