Ingredients for 1 servings:

  • 120 g spelt flour or oat flour
  • 1 tbsp, leveled baking powder
  • 4 tbsp erythritol (sugar substitute) (Xucker light)
  • 60 g coconut flakes
  • 70 g ground nuts, e.g. hazelnuts or almonds
  • 2 ½ tbsp honey
  • 3 tbsp oil, neutral or coconut oil
  • 2 eggs
  • n. B. Berries of your choice
  • 1 tbsp almond butter, optional
  • 1 tbsp cashew butter, optional
  • possibly flavoring (flavor drops), e.g. B. Coconut

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Preheat oven to 200°C (top/bottom heat) (180°C fan/convection oven). Mix all ingredients, except the berries, with a hand mixer. Fold in the berries at the end. Adjust the amount to your taste. Pour batter into 12 prepared muffin cups. Place muffins in the oven and bake for 10 minutes at 200°C (top/bottom heat), then reduce the heat to 180°C (convection oven: 160°C) and bake for another 10-15 minutes. Tip: Flavor Drops can be found at any fitness store, but you can also buy them online. They contain no calories and are available in every flavor. One muffin yields: 148 kcal, 9.6g carbs, 11g fat, 2.6g protein.
