Spring balls

Ingredients for 6 servings:

  • 500 g minced meat, mixed
  • 1 bunch of spring onions
  • 1 bunch of parsley
  • 2 rolls (stale white flour rolls)
  • 2 cups milk
  • 200 g ground almonds
  • 2 eggs (small to medium)
  • salt and pepper
  • Fat (frying fat)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Can be eaten hot or cold and is perfect for parties or picnics: Tear the rolls into pieces and soak them in lukewarm milk. Meanwhile, wash, trim, and finely chop the spring onions and parsley. Combine the minced meat, onions, parsley, almonds, eggs, and the soaked and squeezed-out rolls in a bowl and season with salt and pepper (freshly ground black or green pepper is best!). Heat the cooking fat in a pan, form small balls from the meat dough with wet hands, and fry them over medium heat until evenly browned on all sides. If the meatballs aren’t quite cooked through on the inside, reduce the heat and let them cook a little longer. These spring balls are also great to prepare the day before and are a great snack anytime 😉
