Ingredients for 2 servings:

  • 4 stalk(s) Celery
  • 8 spring onions
  • 14 cherry tomatoes
  • 1 bell pepper(s), red
  • 200 g feta cheese
  • 12 g herbs, fresh
  • olive oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Slice the celery and spring onions, divide the spring onion slices into two portions (firmer part on the bottom, softer part on top), dice the bell peppers and feta, halve the cherry tomatoes, remove any very firm parts of the herbs that won’t soften during pan cooking (e.g., thyme stalks), and roughly chop the herbs. Add olive oil to the pan over medium heat and let the herbs sizzle for 2 minutes, stirring occasionally. Add the celery and firmer parts of the onion to the pan and sauté for 4 minutes, stirring occasionally. Add the feta, tomatoes, softer parts of the spring onions, and bell peppers and sauté for about 6 minutes, until the feta is completely melted. Remove the pan from the heat and cover the vegetables generously with freshly ground pepper. Season with salt. Stir and let cool briefly.
