Ingredients for 4 servings:
- 300 g wheat flour
- 300 g rye flour
- 2 eggs
- Salt
- some milk, lukewarm or water
- 1 liter of milk
- 2 tbsp lard
- 750 g apples or plums
- e.g. sugar and cinnamon or
- Potato(s) instead of fruit

Franconian recipe
Mix the flour with eggs, salt, and milk to form a firm pasta dough. Form rolls approximately 3 cm in diameter and cut them into 3-4 cm long pieces. Bring the liter of milk (3/4 l for plums) and the lard to a boil in a saucepan and pour into a casserole dish. Gradually add the rolls to the hot liquid and bake for about 30 minutes at 200°C. In the meantime, peel and core the apples, cut the apples into small pieces, and sauté until soft (only core the plums, do not sauté them). Finally, stir them into the noodles and serve sprinkled with sugar and cinnamon. If you like, you can add quartered potatoes instead of the fruit at the beginning and serve with cucumber salad.
