Squid fillet with Pimientos de Padrón

Ingredients for 3 servings:

  • 500 g squid fillet(s)
  • 400 g Padrón peppers
  • possibly pointed peppers, small
  • 3 slices of lemon
  • 2 tbsp olive oil
  • Salt (Flor de Sal with pepper), coarse

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Peel the silver skin off the squid and cut the fillet into pieces. Wash the peppers. Heat oil in a pan and fry the squid. Add the peppers immediately, as the squid will be cooked after 5 minutes. No longer, or it will become tough. Then place in appetizer bowls, arrange a slice of lemon, and sprinkle with coarse flor de sal. Serve with fresh white bread, and it tastes like vacation.
