Ingredients for 4 servings:

  • 1 kg apricot(s), pitted
  • 500 g gelling sugar 2:1
  • 75 ml white wine, e.g. Pinot Gris
  • 4 sprigs of thyme

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 4 minutes; Total time approx. 3 hours 14 minutes

with white wine and thyme

Chop the apricots and mix with the wine and the gelling sugar. Let it sit for a few hours, if desired. Then purée lightly and add the picked thyme leaves. After adding the gelling sugar, bring to a boil while stirring. Boil gently for about 3-4 minutes, stirring continuously. Pour into hot, rinsed jars, seal tightly, and let cool upside down. Makes approximately 5 medium-sized jars.
