Star Cake
The perfect star cake recipe with a picture and simple step-by-step instructions.
Cake base light:
- 200 g Sugar
- 8 g Vanilla sugar
- 10 g Baking powder
- 4 Pc. Eggs
- 200 ml Rapeseed oil
- 300 g Flour
- 200 ml Advocaat
Cake base dark:
- 100 g Sugar
- 4 g Vanilla sugar
- 10 g Baking powder
- 2 Pc. Eggs
- 100 ml Rapeseed oil
- 100 g Flour
- 30 g Cocoa powder
- 40 g Ground hazelnuts
- 100 ml Hazelnut liqueur
filling
- 3 Pc. Eggs
- 600 ml Whipped cream
- 350 g Chocolate
- 9 g Ground gelatin
- 6 g Ground cardamom
- 3 g Ground cinnamon
- 200 g Dark couverture
- 150 g Cherry jam
- 200 g Cocktail cherries
- 100 g Flaked almonds
Cake base light
- Put the sugar with 4 eggs and 1 packet of vanilla sugar in the food processor and let it beat for 10 minutes. Then add the egg liqueur and the oil while stirring. Sieve the flour and baking powder onto the mixture and fold in carefully. Then fill the dough into the greased star shape and bake for about 35 minutes at 180 °.
Cake base dark
- Beat the sugar with 2 eggs and the vanilla sugar in the food processor for 10 minutes and then add the nut liqueur and the oil. Sieve the flour and cocoa into the mixture and mix with the ground hazelnuts. Put the dough in a star shape and bake for 20 minutes at 180 °.
filling
- Whip the whipped cream until stiff and refrigerate. Melt the Christmas chocolate, add the cardamom and cinnamon. Beat 3 whole eggs on the water bath with a hand mixer for about 10 minutes until creamy.
- Add the soaked gelatine and chocolate to the eggs and stir. The mass is then cooled until it is firm and the cream is folded in.
Decoration
- Make 12 chocolate lattices out of melted chocolate on baking paper and then leave to cool.
Serving
- Cut through the light dough once and spread thinly with cherry jam. Pour the filling into a piping bag and cover the bottom with it. Then the dark floor is laid on top and smeared with cream. On top of this is the second light-colored floor, which is coated with jam again. Now the edge and the lid are coated with cream. The cooled chocolate grids are draped around the cake. The decoration consists of cocktail cherries and roasted almond flakes.
