Ingredients for 2 servings:
- 2 steak(s) (beef steak, e.g. fillet, ribeye… approx. 250 g each)
- 1 goat cheese (Camembert)
- some rosemary
- some thyme
- salt and pepper
- ½ tbsp clarified butter for frying
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
great with rosemary potatoes, wedges, bacon beans, etc.
Pat the steaks dry and season with salt and pepper. Preheat the oven to 200°C (top/bottom heat). Sear the meat on both sides for 3-5 minutes, depending on the thickness. Turn the heat down to low first to avoid burning (for a steak about 3 cm thick, it should be medium rare). Place the meat on a baking sheet. Pluck the rosemary and thyme from the sprigs and chop them. Place them on the meat. Slice the goat cheese (max. 0.5 cm thick) and spread them evenly over the seared meat. Place in the preheated oven for about 10 minutes. When the cheese is nicely melted, remove the meat from the oven and serve immediately. This goes very well with potato wedges, beans in bacon, or a green salad.
