Ingredients for 1 servings:

  • 500 g butter
  • 6 cloves garlic (finely chopped)
  • 2 tsp thyme (fresh, chopped)
  • 8 tomatoes, dried (finely chopped)
  • 2 tbsp, leveled chili paste
  • some sea salt
  • some pepper, freshly ground black
  • 1 tsp, sautéed cumin (freshly ground)
  • 1 tsp, leveled mustard seeds (freshly ground)
  • 2 tbsp tomato paste
  • 2 tbsp, leveled lime juice
  • some lime zest, grated
  • tbsp honey

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the butter to room temperature before cooking. Combine the butter and all ingredients in a tall bowl and mix thoroughly with a mixer. Let it sit for at least 2 hours, then taste and adjust the seasoning if necessary. Be careful with the chili paste; it takes a while to fully develop its flavor. I use a Chilean chili paste. Depending on the spiciness of the paste and your personal tolerance for heat, it’s best to work up the heat gradually, using a little less chili paste to start with.
