Steaks à la Saltimbocca, hunter's style

Ingredients for 4 servings:

  • 4 minute steak(s) of pork
  • 400 g mushrooms, brown
  • 4 slices of smoked ham
  • 4 large sage leaves
  • 2 shallots
  • 2 sprigs of oregano
  • 6 sprigs of parsley
  • 2 tsp lemon juice
  • 200 ml cream
  • 100 ml vegetable stock
  • 3 tbsp oil for frying
  • 1 tsp butter
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean and slice the mushrooms. Wash the parsley, spin dry, and chop. Wash the oregano, spin dry, and chop. Peel the shallots and finely dice them. Wash the steaks, pat dry, and season with pepper. Place a slice of ham and a leaf of sage on each side, securing them with a toothpick. Heat 2 tablespoons of oil in a pan, sear the steaks briefly on both sides, then immediately remove from the pan and keep warm. Add 1 tablespoon of oil and the butter to the pan and fry the mushrooms, shallots, and oregano for about three minutes over medium heat. Then deglaze with the stock and cream and simmer for a few minutes, then season with salt, pepper, and lemon juice. Return the steaks to the pan and simmer for a few more minutes over low heat. Arrange the steaks and sauce on plates and serve sprinkled with the parsley.
