Steamed mackerel in orange and garlic vinaigrette

Ingredients for 1 servings:

  • 1 fish (mackerel)
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 1 orange(s), organic
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 piece(s) aluminum foil
  • 2 sprigs rosemary
  • 2 sprigs of thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Rinse the mackerel, pat dry, and place on the aluminum foil. Season inside and out with salt and pepper. Drizzle the juice of half an orange over the fish, place a sprig of rosemary and thyme inside the fish, and place the other sprigs on the outside of the fish. Finely dice the garlic and place it on the fish. Drizzle with olive oil. Slice the other half of the orange and place it on the fish. Close the aluminum foil and cook in the oven preheated to 160°C on the middle rack with fan for 20 minutes. Arrange the mackerel in the opened foil. Cook with the skin-on new potatoes. No additional sauce is needed; the foil creates a wonderfully tasty broth for the potatoes.
