Stew with smoked pork and vegetables

Ingredients for 4 servings:

  • 400 g potatoes
  • 400 g carrot(s)
  • 2 kohlrabi (approx. 400 g)
  • 2 stalk(s) leeks (approx. 400 g)
  • 20 g butter
  • 500 g smoked pork, whole (boneless)
  • 1 liter beef broth (instant)
  • 1 bunch of parsley
  • 1 lemon(s) (peel and juice)
  • salt and pepper
  • Thyme

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, wash, and dice the potatoes, carrots, and kohlrabi. Trim, wash, and slice the leek. Heat the butter and sauté the leek for 2 minutes. Add the remaining vegetables, season, place the smoked pork on top, and pour in the meat broth. Cover and simmer for about 40 minutes. Remove the meat, dice it, and add it back in. Mix the chopped parsley and grated lemon zest and add it to the stew. Season to taste with lemon juice.
