Stir-fried pork

Ingredients for 4 servings:

  • 4 pork schnitzels, cut into thin strips (alternatively approx. 600 g pork fillet)
  • 500 g bell pepper(s), colored, pitted, roughly chopped
  • 2 onions, halved, cut into rings
  • 2 onions, quartered
  • 5 garlic cloves, sliced
  • 5 hot chili peppers, roughly chopped
  • 5 chili peppers, mild, roughly chopped
  • 2 tsp sambal oelek
  • 2 tsp, heaped chili flakes
  • 125 ml vegetable stock
  • 100 ml soy sauce
  • 1 tsp spice mix (Asian spice mix)
  • Salt
  • Pepper from the mill
  • 6 tbsp oil (rapeseed oil)
  • 250 g rice (long grain)
  • e.g. curry powder

original Thai recipe – very spicy

Season the meat strips with salt, pepper, and Asian seasoning mix and let stand for about 30 minutes. In the meantime, mix the bell peppers with the onions, garlic, hot and mild chilies, chili flakes, sambal oelek, vegetable stock, and soy sauce. Stir everything frequently and let stand for a while. Heat the oil in a large wok and fry the meat for about 5 minutes. Reduce the heat and add the vegetable mixture and stock. Cook over medium heat, stirring occasionally, for about 20 minutes. About 10 minutes before the end of the cooking time, add the rice and cook until tender. Drain and season with enough curry powder to taste until the rice has a nice curry flavor. Now place the rice on plates, divide the meat and vegetables between the plates, and serve immediately.
