Stock: Apricot Ketchup

The perfect stock: apricot ketchup recipe with a picture and simple step-by-step instructions.

  • 500 g Pitted apricots
  • 1 Red onion
  • 1 Clove of garlic
  • 1 tbsp Brown sugar
  • 200 ml White wine dry
  • Salt pepper
  • Chilli flakes
  • Olive oil
  1. Chop the apricots into large pieces, finely dice the onion and garlic. Sweat the garlic and onion in approx. 1 tablespoon of olive oil, add the apricots, sweat together for approx. 3 minutes. Add sugar and wine, also pepper and about 1/2 teaspoon salt. Chilli flakes or fresh chilli as required. I took almost 1/2 teaspoon of flakes.
  2. Now let everything simmer over a medium heat for 15 minutes. Always stir. Puree everything with the blender and fill to the brim in small bottles with twist off lids and close immediately. Tastes great with meat and fish from the grill, without chili also for dessert (e.g. rice pudding).
