Ingredients for 4 servings:
- 200 ml milk
- 760 g flour (wheat flour)
- 350 g butter / margarine
- 70 g yeast
- 90 g sugar
- 1 egg(s)
- 170 g candied orange and lemon peel, mixed
- 140 g almonds (sliced)
- 500 g raisins
- Salt
- Spice(s) for Stollen
- Rum flavor
- Lemon(s) – flavoring
- Bitter almond aroma

Roast the almonds in the oven until golden yellow. Soak the raisins in warm water for about 10 minutes, then let them drain in a sieve. Mix the warmed milk with the yeast. Knead everything with 1/3 of the flour to form a pre-dough. Then add the remaining flour, butter, sugar, egg, candied lemon/orange peel, salt, Stollen spice, and flavorings to this pre-dough. Let the mixture rest in a warm place for about 15-20 minutes. Now it can be kneaded thoroughly (knead by hand if necessary). Once the dough is well kneaded, add the cooled almonds and knead the mixture thoroughly again. Finally, add the dripping wet raisins and knead briefly. Let the dough rise for about 1 hour. Shape the desired stollen and let it rest for a while. If desired, they can be filled with marzipan. Bake at 200°C for about 1 hour or until the stollen is baked through. Check the needle for a firm texture!
