Store cut fruits and vegetables in a sealed container or keep them well covered in the refrigerator. There should be no excess liquid, for example from washing, in the can.

It is better to cut up fruits and vegetables as soon as possible before eating them. For one thing, slicing accelerates vitamin loss. On the other hand, cut fruits and vegetables are more susceptible to the proliferation of germs because they have a larger surface.

Browning, for example in apples and bananas, is not a sign of spoilage. It occurs when the ingredients, such as polyphenols, come into contact with oxygen. To prevent the unsightly discoloration, it helps to sprinkle the pieces of fruit with a little lemon juice.
