Olive oil is made up mostly of monounsaturated fats, most notably an omega-9 fatty acid that may lower your risk of heart disease. The other ingredients such as secondary plant substances and vitamin E also make olive oil so healthy.

When storing olive oil, three things are crucial: darkness, the right temperature and protection against oxidation.
Darkness: Store the bottles or cans of olive oil in the dark and away from direct light. Good storage places for the oil are drawers, lockable shelves or a dark cellar or pantry.
The right storage temperature: There are slightly different statements about the right temperature for olive oils. In any case, you won’t do anything wrong if you keep the bottles (if possible) at ten to 18 degrees Celsius. If stored above 20 degrees, the oil ages faster. To protect the oil from heat, do not store it near the stove or heater.
Protection from oxygen: When olive oil comes into contact with oxygen, it accelerates the natural oxidation process. This in turn changes the taste of the oil and can cause it to go rancid. Therefore, make sure to close the bottles or canisters tightly after opening them. Never store olive oil without a lid.
Store olive oil in the fridge?
The temperature is crucial when storing olive oil. If the environment is too warm, the oil will go bad faster.
