Storing Kohlrabi: This is How They Keep For a Long Time

Store kohlrabi in the refrigerator for a maximum of 14 days

Before you can store kohlrabi, you must first harvest or buy the vegetable. The rule here is: Harvest or buy only as much as you can eat. If you want to eat the kohlrabi within a few days or a week, you can store it in the fridge!

  • To do this, first, remove the kohlrabi leaves and stems, as these quickly dry out the vegetables. The kohlrabi is even better stored in the refrigerator if you wrap it in a damp cloth.
  • Wrapped in a cloth, the vegetables stay fresh in the refrigerator for up to two weeks. The kohlrabi can be stored in the fridge for up to six days without a cloth.

Store kohlrabi – in the freezer

You can store kohlrabi for a long time if you freeze it. However, the thawed kohlrabi tastes much less crisp and is therefore preferred for cooking. Before you put the kohlrabi in the freezer, remove all leaves and stems, peel the kohlrabi and remove the root end. You can freeze kohlrabi in two different ways:

  1. You can freeze kohlrabi raw. To do this, cut the prepared vegetables into pieces, put them in a freezer bag, seal it airtight, and put the kohlrabi in the freezer.
  2. Alternatively, you can blanch the kohlrabi before freezing. Put the vegetable pieces in boiling salted water for three minutes and then rinse them in cold water. After the kohlrabi has cooled and dried off, you can freeze it as usual.

Storing kohlrabi by pickling

You can store kohlrabi by pickling it. Here, too, the kohlrabi should be prepared as described (remove the leaves and stalks, peel the kohlrabi, remove the roots) and then blanched in salt water. Then let the vegetables cool down as well!

  • Then put the kohlrabi in mason jars. Add either a boiled and cooled vinegar solution or boiled and cooled salt water.
  • Then seal the jars airtight. Finally, boil the jars for about 30 minutes and make them durable for several months.
