Strawberry Cake with Marzipan
The perfect strawberry cake with marzipan recipe with a picture and simple step-by-step instructions.
For the ground:
- 4 Eggs
- 125 g Sugar
- 1 packet Vanilla sugar
- 100 g Flour
- 3 tbsp Cocoa powder
- 1 tsp Baking powder
For the filling:
- 600 g Whipped cream
- 3 Bags Gelatin ground white
- 2 packet Vanilla sugar
Aside from that:
- 500 g Strawberries
- 1 Marzipan blanket from Dr. Oe …. r
- 3 tbsp Strawberry jam
- Parchment paper
- Some fat for the shape
- Decoration as desired
- Brush a 26 cm springform pan on the bottom with fat and line the bottom with baking paper. Pre heat the oven to 180 degrees celcius.
For the ground:
- Beat eggs with sugar and vanilla sugar until frothy. Mix flour with baking powder and cocoa and stir in. Pour the dough into the pan and smooth it out. Bake for about 30 minutes. Take out and let cool down briefly. Then remove the bottom of the mold and peel off the paper. Once the bottom has cooled down, cut it horizontally. Place the base on a cake plate and close a shape border around it.
Filling:
- Clean, wash and pat dry the strawberries. Slice. Mix gelatine with water according to the instructions and allow to swell. Whip the cream with vanilla sugar until stiff. Dissolve the swollen gelatin over a mild heat. Stir 4 tablespoons of cream into the gelatin, then stir this mixture into the cream.
- Spread half of the cream on the cake base and spread the strawberries on top. Put the rest of the cream on top and smooth it out. Place the second cake base on top and press on. Cool the mold for at least 1 hour. Then carefully remove the edge.
- Cover the cake with strawberry jam. Put on the marzipan blanket and press it all around and garnish as you wish.
- I took birthday decorations here. The base can be baked a day in advance and is then easier to cut.
