Mandarin Coconut Muffins

The perfect mandarin coconut muffins recipe with a picture and simple step-by-step instructions.

  • 200 g Sifted flour
  • 100 g Sifted powdered sugar
  • 0,5 packet Baking powder
  • 3 Tbsp heaped Desiccated coconut
  • 1 packet Zitroback
  • 1 Egg
  • 200 ml Orange juice
  • 125 ml Oil
  • 1 small can Mandarins
  • Paper cases
  1. Line a muffin baking sheet with paper liners. Pre heat the oven to 180 degrees celcius. Drain the mandarins in a colander.
  2. Mix all ingredients except for the mandarins with a wooden spoon. Carefully fold in the tangerines. Pour the batter into the molds. Bake in the hot oven for about 20-25 minutes. Take out and let cool down.
