Ingredients for 4 servings:
- 500 g strawberries
- 250 g quark
- 300 ml sparkling wine
- 10 g agar-agar
- 200 ml whipped cream
- e.g. sugar or sweetener
- e.g. strawberries
- e.g. praline(s) (truffles)
- e.g. whipped cream
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Whip the whipped cream until stiff. Purée 250g strawberries, mix with the quark, and sweeten to taste. Carefully fold into the cream and set aside (refrigerate). Purée the remaining strawberries with 100ml of sparkling wine. Mix the remaining sparkling wine with agar-agar and prepare according to the package instructions. Mix with the sparkling wine and strawberry mixture, divide among 4 glasses, and let cool slightly. Spread the strawberry quark on top and refrigerate. Garnish with whipped cream, truffles, strawberries, or similar as desired before serving.
