Strawberry dream with vanilla sauce

Ingredients for 6 servings:

  • 750 g strawberries
  • 1 tbsp sugar (assugrin powder)
  • 2 dl apple juice, white grape or orange juice
  • 2 tbsp Cognac or Cointreau as desired
  • 5 dl milk (skimmed milk 0.3% fat)
  • 3 eggs, beaten
  • 1 vanilla pod(s), scraped
  • 3 tbsp sugar (assugrin powder)
  • 3 tbsp corn flour
  • 3 ladyfingers / per person

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Strawberry sauce: Set aside four good-looking strawberries for decoration. Stem and quarter the remaining berries, then puree them with the fruit juice and any alcohol. Strain through a sieve if desired. Chill. Vanilla sauce: Slowly bring the milk to a boil with the beaten eggs, the vanilla pod (split open and scraped), the sweetener, and cornstarch until thickened, then remove from the heat. Pour into a metal bowl (through a sieve if desired) and cover with cling film to prevent a skin from forming. Chill until ready to serve. Place 3-4 ladyfingers in each dessert bowl or on each dessert plate and pour the strawberry sauce over them. Let it sit for several hours (2-4). Just before serving, pour the vanilla sauce over the top and garnish with a fan-shaped strawberry.
