Pasta salad with shrimps & squid

Ingredients for 5 servings:

  • 300 g penne, farfalle or trulli
  • 150 g shrimp(s), cooked
  • 150 g squid(s) (rings)
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • 1 pinch of salt
  • 1 onion(s), finely chopped
  • 8 lettuce leaves
  • 6 tbsp coffee cream
  • 2 tbsp orange juice
  • 1 tbsp lemon juice
  • Salt and pepper, white
  • 2 tbsp basil, finely chopped

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta in vegetable broth (with a dash of olive oil) until al dente. Drain well and let cool. Cook the calamari in 200 ml of water with orange and lemon juice for 8-10 minutes. Combine the sauce ingredients and mix with the pasta, the squid (including its liquid), the shrimp, and the chopped onion. Let stand briefly and serve on washed, well-drained lettuce leaves. Sprinkle with basil.
