Strawberry-ginger jam

Ingredients for 1 servings:

  • 700 g strawberries
  • 300 g fresh ginger
  • 500 g gelling sugar (2:1)
  • 200 ml white wine

Instructions

Wash and peel the ginger. Boil the peels in 200 ml of white wine for 30 minutes, then squeeze well and strain. Grate the peeled ginger using the coarse blade of a food processor or grater. Rinse the strawberries and then roughly mash them with a masher. Place them in a large saucepan with the grated ginger pieces. Add the white wine juice from the peels. Add the gelling sugar and cook everything together, stirring, for about 4 minutes. Pour into prepared and clean jam jars (each holding 1/4 l) and immediately seal with the screw caps. Finally, turn upside down for another 5 minutes. Then turn over and let cool.
