Strawberry Mascarpone Cake

Ingredients for 1 servings:

  • 100 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 100 g flour
  • 25 g cornstarch
  • 1 tsp baking powder
  • 600 g strawberries
  • 1 cup of cream
  • 1 tsp sugar
  • 250 g mascarpone
  • 1 packet of vanilla sugar
  • some milk, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cream the butter until fluffy. Stir in the eggs, sugar, and vanilla sugar alternately until the sugar is well dissolved. Fold in the flour, cornstarch, and baking powder. Pour into a fruit base dish lined with baking paper and then bake at approx. 175°C for approx. 20 minutes. Allow to cool. Wash, pick, and finely chop the strawberries. Reserve a few good-looking strawberries. Whip the cream until stiff. Mix the mascarpone with the sugar and vanilla sugar, and a little milk if desired. Fold in the cream. Fold in the strawberry pieces and pour the mixture onto the fruit base. Decorate with the reserved strawberries. Refrigerate for a while.
