Ingredients for 2 servings:
- 200 g pasta (strawberry noodles, e.g. Karls)
- 550 ml almond drink with vanilla
- 450 g strawberries
- Vanilla, ground, vanilla pulp, vanilla extract, etc.

A must for all strawberry lovers, super quick to make, vegan
Place the strawberry pasta in a saucepan with the vanilla almond milk and a little ground vanilla, cover, and bring to a boil. Then continue to simmer over medium heat until the pasta has almost absorbed the liquid. Stir frequently to prevent burning. When the liquid is almost gone and the pasta is starting to soften, add the sliced strawberries and simmer for another 2-3 minutes with the lid on. The pasta will absorb a little more liquid from the fresh strawberries. Don’t forget to stir occasionally, and when everything is nice and creamy, it’s ready to serve. 525 kcal per serving. Notes: For my taste, this dish doesn’t need any additional sweetener. If you prefer it sweeter, you can of course add more sugar. If you prefer a more runny consistency, you can use more of the vanilla almond milk and thicken it at the end with dissolved vanilla pudding powder or cornstarch. This recipe also works with regular pasta, but for the ultimate strawberry flavor, I recommend buying or ordering strawberry pasta from the store. I highly recommend this dish even to non-vegans (like me). The vanilla almond milk has such a delicious vanilla flavor and pairs perfectly with the strawberries.
