Strawberry Parfait

Ingredients for 6 servings:

  • 500 g strawberries
  • 150 g sugar
  • 4 egg yolks
  • 400 ml cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Super delicious!!

Line a loaf pan with cling film and place in the freezer. Hull and quarter the strawberries. Sprinkle with 75g of sugar and puree. Whip the cream until stiff peaks, then chill. Beat the egg yolks with the rest of the sugar over a pan of hot water until thick and foamy, then remove from the pan and continue beating until the egg mixture has cooled. Now fold about 3/4 of the fruit purée into the egg mixture and carefully fold in the cream. Pour half of the cream into the loaf pan and freeze for about 20 minutes. Then spread the remaining fruit purée on top and spread the rest of the cream on top. Freeze for at least 4 hours before serving.
