Ingredients for 4 servings:
- 250 g strawberries
- 1 orange(s), including juice and peel
- 125 g sugar
- 750 ml cream
- 1 pack of cream stiffener
- 6 cl orange liqueur
- strawberries, halved
- Kiwi(s) sliced
- mint
Instructions
Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes
Roughly dice the strawberries, add the orange juice, orange zest, and 50g of sugar, and simmer gently for 3 minutes. Puree, strain through a sieve, and set aside. Whip the cream with the cream stiffener and 75g of sugar until stiff. Fold in the strawberry puree and liqueur. Pour into a loaf pan lined with cling film. Freeze for at least 8 hours. Briefly dip the pan in hot water, turn the parfait out onto a plate, and slice. Garnish with halved strawberries, kiwi slices, and mint.
